Trotter Protégé Opens A 10 in Hyde Park

This week's 'Dining Destinations' is about Matthias Merges' new restaurant. The former executive chef at Charlie Trotter's opened the eatery the same day his mentor died.

Matthias Merges’ latest venture, A 10, opened this week in Hyde Park. The restaurant features European-Mediterranean cuisine such as wood-fired snails and braised rabbit, as well as pizzas and pasta.

In a strange twist of fate, Merges, who was the executive chef at Charlie Trotter’s, opened the restaurant the same day that his mentor died in his home at the age of 54

Merges told Chicago Eater "I can't think of a better tribute (to Trotter) than opening a restaurant tonight.”  He had worked with Trotter for 14 years.

Merges’ also owns Yusho, in the Avondale neighborhood, which is a Japanese restaurant inspired by street food. A Las Vegas outpost of Yusho is in the works, scheduled to open next year in the Monte Carlo Resort and Casino, reports Eater Las Vegas.
